Title: Preserved Grape Leaves

Yield: 2 Qts

50 Perfect grape leaves (to 70)
2qtWater
1/4cSalt
  1 lemons (to 2) in wedges
3cWater
3cVinegar

Have on hand 2 hot sterile 1-qt jars and lids.

Make a brine of the water and salt. Bring this to a boil and add the grape leaves. Boil them 30 seconds and drain them.

When leaves are cool enough to handle, stack them into 6 stacks, shiny side up, largest leaves on the bottom.

Roll each stack and tie it with string.

Pack the stacks on end in the jars, trimming the edges as necessary. Tuck in several lemon wedges.

Bring to a boil 3 c vinegar with 3 c water. Pour the diluted vinegar over the leaves, covering them completely.

Seal the jars. May be stored refrigerated for 6 months. If more extended storage is required, the jars should be processed 15 min in a hot-water bath.
